After more than two decades spent opening restaurants with renowned chef Alain Ducasse, Chef Didier Elena understands what it takes to deliver an exceptional dining experience. But as he brings that expertise to large-scale foodservice, his vision is not centered on his own name or legacy. It is focused on the people who will shape the future of the culinary industry.
“None of this is about me,” Chef Didier said. “It is about inspiring chefs, giving them the confidence to develop their own voices and creative skills.”
In addition to his work with Ducasse, Chef Didier served as director of food and culture for Hogsalt Hospitality, overseeing restaurant menus in Paris, New York City and Chicago. Now, he is applying the lessons of fine dining to a new challenge: creating memorable food experiences at scale while developing the chefs and culinary experts who will lead the industry forward.
“How do you inspire someone? You have to help them love what they do,” he said. “When people understand the purpose behind their work, feel supported and take pride in what they create, that passion reaches everyone around them, from their teammates to the guests they serve.”
His approach brings elements of the fine dining world into large-scale foodservice. Seasonality, attention to detail and respect for ingredients can make a meal feel distinctive, regardless of how many guests are being served.
“Fine dining teaches you to respect the seasons, the technique and every ingredient on the plate,” Chef Didier said. “In large-scale foodservice, the challenge is to bring that same level of thought and care to many more people in a way our teams can execute consistently. Quality and scale should work together.”
Sustainability is another essential part of that work. By selecting ingredients thoughtfully, planning menus with seasonality in mind and making responsible use of available resources, culinary teams can reduce waste and become better stewards of the food systems they depend on.
“Being a good steward of our resources begins with the decisions we make in the kitchen,” Chef Didier said. “Choosing ingredients with the seasons, using products thoughtfully and designing menus with purpose allow us to reduce waste while serving food we are proud of.”
Chef Didier’s next chapter brings together experience, mentorship, and purpose. His goal is not simply to influence what is served today, but to prepare the people who will define what great foodservice looks like tomorrow.
“The greatest success is not creating something that depends on one person,” he said. “It is developing chefs who believe in their abilities, care deeply about their work and are ready to lead others. That is how the work continues and becomes stronger.”
By helping chefs love their work, elevate their craft, and respect their resources, Chef Didier is building a legacy designed to be carried forward by others.
