How We Build Food Safety Into Everyday Operations
Our food safety standards address key stages of food handling, including receiving, transportation, storage, preparation, temperature control, service, and sanitation. Guided by regulatory requirements, recognized industry practices, and risk-based principles, these standards provide a consistent foundation while supporting the distinct needs of our operations.
Strong standards also depend on people who understand their responsibilities. Team members receive food safety training aligned with their responsibilities, while designated managers are required to complete additional food safety and allergen training and certification. Ongoing communication, coaching, and leadership support reinforce expectations and consistent food safety practices across our operations.
Food safety is a shared responsibility, and every team member is expected to remain attentive, raise concerns, and take ownership of food safety.
Continuous Improvement and Oversight
Our food safety program is regularly reviewed and updated to reflect regulatory requirements, industry practices, operational experience, and emerging risks.
Internal operational reviews, independent third-party food safety audits, and regulatory inspections provide multiple levels of oversight and help us evaluate our practices and identify areas requiring improvement or corrective action. When concerns are identified, our teams assess the available information, take appropriate corrective action, and verify that identified issues are addressed. These insights also help inform our standards, training, and operational support.
That oversight extends to our supply chain. We work with approved suppliers and distributors as part of our broader approach to food safety and supply chain oversight. Our food safety, procurement, and operations teams coordinate when recalls, supplier notifications, product concerns, or emerging issues require attention.
Supporting Allergen Awareness
Clear communication is especially important for guests with food allergies and other dietary needs.
Our unit leaders are required to complete allergen awareness training designed to help them guide their teams, respond appropriately to guest questions, and reinforce established allergen procedures. Guests with food allergies or other dietary needs are encouraged to speak with a manager before ordering so available ingredient information and menu options can be reviewed.
Staying Prepared to Respond
Elior North America maintains established processes for responding when potential food safety concerns arise. These processes establish clear expectations for promptly escalating concerns, gathering and evaluating available information, taking appropriate action regarding potentially affected products, and coordinating response activities with the appropriate internal and external parties when necessary.
